Colombian Coconut Bread Pudding

We did a lot of research to get this Colombian recipe right. This country has so many influences, from the Middle East to Spain, and due to its diverse topography, an abundance of exotic fruits and vegetables have found their way onto the menu. The food is always fresh, packed with fruits and vegetables, mild and rich in flavour.

Pudding

  • 1 loaf white bread, cubed
  • 3 cups coconut milk
  • 1 can (14 oz) condensed milk
  • 4 beaten eggs
  • ¼ teaspoon cinnamon
  • ¼ cup sugar

Mango Sauce

  • 1 ripe mangos, peeled and diced
  • 6 tablespoons of water
  • 5 tablespoon sugar
  • 1 cinnamon stick

Grated coconut for garnish

Preparation Method

  • Place the bread in a large baking pan and at 180° for about 5 minutes.
  • In a large mixing bowl, whisk together the coconut milk, condensed milk, coconut extract, cinnamon, and the beaten eggs and mix well.
  • Once the bread cubes are toasted, add them on to the milk mix. Let it stand for approximately 20 minutes or until bread absorbs most of the mixture.
  • Pour the bread pudding mixture into a baking pan. Bake uncovered at 190° oven for 1 hour or until a knife inserted into the centre comes out clean.

Mango Sauce

  • On a sauce pan mix the water, sugar and cinnamon stick and bring it to boil on high heat.
  • Simmer until the liquid reduces and the sauce thickens, about 30 minutes. Stir occasionally to avoid burning and set aside.
