Glass Noodle Salad

Try the Lee Kum Kee version of a very home feeling popular dish with Thai roots, Glass Noodle Salad. This is a very summer dish with easy steps to make. Get involved with some friends and family and start creating this delightful meal with some Lee Kum Kee special sauce.


  • 100g mung bean vermicelli
  • ½ carrot
  • ½ cucumber
  • 2 spring onions
  • 1 Tbsp. toasted sesame seeds

The Dressing

  • 1 tsp. Lee Kum Kee Premium Light Soy Sauce
  • 1 Tbsp. Ching Kiang Black Vinegar
  • 1½ tsp. sugar
  • 1 tsp. Lee Kum Kee Premium Oyster Sauce
  • ½ tsp. Sichuan peppercorns, finely crushed
  • 1 tsp. Lee Kum Kee Pure Sesame Oil
  • 2 Tbsp. water


Preparation

1. Put the mung bean vermicelli in a bowl, cover with hot water and leave to soak for 6 minutes, until the noodles have softened. Remove noodles from the water and leave to dry on a clean tea towel.

2. Cut the carrot, cucumber and spring onions into fine matchsticks.

Serving

3. Put all the dressing ingredients in a small bowl and mix together well.

4. Place all the salad ingredients except the sesame seeds in a large mixing bowl, pour over the dressing and mix together until everything is evenly coated, don’t be afraid to use your hands if necessary.

5. Transfer the dressed salad to a serving plate and scatter over the toasted sesame seeds to finish and serve.
