Miso Butter Noodles

Soft noodles topped with a crispy fried egg and umami miso butter, a bowl of pure indulgence.

  • Ramen noodles, 1 packet

  • 1 free-range egg

  • 1 spring onion, finely chopped

Miso Butter

  • 2 spring onions, finely chopped

  • 1 Tbsp chilli oil

  • 2 Tbsp of crispy shallots

  • 1 Tbsp toasted sesame seeds

  • 2 Tbsp miso paste, red or white

  • 1 Tbsp mirin

  • 4-5 Tbsp salted butter

  • Blend butter, mirin, chilli oil, crispy shallots, 2 of the spring onions and toasted sesame seeds with miso paste in a food processor.

  • Boil your noodles in water on a rolling boil for 3-4 minutes. Once cooked, strain and add them to a bowl of cold water for 5 seconds to retain their texture, and then serve the noodles on a plate. Whilst your noodles are still hot, add a generous amount of the miso butter over the top.

  • In a wok on a medium to high heat, add a tablespoon of oil and crack an egg into the centre, allowing the egg to cook and crisp on the edges. Turn the heat down and add a tablespoon of miso butter. Once melted, serve directly over the noodles. Garnish with extra sesame seeds and spring onions.
