Salted Egg Chicken Nuggets

Succulent chicken thighs wrapped in a super crispy coating, tossed through a creamy, spicy and aromatic salted egg sauce.

Ingredients

  • 300g boneless skinless chicken thighs, cut into 3cm chunks

  • 1tbsp rice wine

  • 1tbsp fish sauce

  • Ground white pepper

  • 1 egg

For Flour Breading

  • 30g plain flour

  • 70g cornstarch

  • 2 tsp paprika

  • 1 tsp garlic powder

  • salt and pepper

  • oil for deep frying

For Salted Egg Sauce

  • 30g butter

  • 2 tbsp plain flour

  • 4 to 5 red bird’s eye chillies, sliced

  • 15 curry leaves, plus extra to garnish

  • 6 to 8 salted egg yolks only, steamed and finely mashed

  • ½ tsp chicken powder

  • 300ml milk

  • 1 red chilli, sliced, for garnish

  • Heat the oil in a deep fryer or wok over a medium-heat. Season the chicken with rice wine, fish sauce, and pepper. Then crack an egg in and mix well. Set aside.

  • In a bowl, combine all the ingredients for breading. Mix well. Then transfer the flour mixture to a plate, and add the seasoned chicken nuggets and coat well until chicken pieces are dry.

  • Deep fry some curry leaves for just 10 to 15 seconds. Remove from oil and drain on a plate with kitchen paper. Reserve for garnish.

  • Deep fry the chicken nuggets until golden brown. Then transfer onto a plate with a paper towel to remove excess oil. Set aside.

For the Salted Egg Sauce:

  • Heat butter in a frying pan - sauté 15 curry leaves and red chillies until aromatic. Add 2tbsp plain flour and cook for 1 min to make a roux. Add the mashed salted egg yolks and chicken powder, and mix well until foamy and well combined. Add milk and whisk and simmer until mixture is slightly thickened.

  • Add the fried chicken nuggets to the pan and gently toss until fully covered with sauce. Transfer salted egg chicken nuggets onto a serving plate, garnish with reserved curry leaves and some red chili slices and serve.
