Liang Mian

A creamy and refreshing chilled Taiwanese noodle salad

  • 2-3 nests of dried egg Noodle or wheat Noodle

  • ¼ cucumber, Garnish

  • ¼ carrot, Garnish

  • 1 tsp chilli oil for garnish

Sauce

  • 3 tbsp Sesame Paste

  • 3 tbsp water

  • 2 tsp Lime Juice (or 1 tsp black vinegar)

  • 1 tsp Garlic Paste

  • 1 tbsp Sugar

  • 1 tbsp light soy sauce

  • 1 Tbsp sesame seed

Preparation

  • Boil the noodles for 5-6 mins, then blanch in cold water and rinse through until cold. Finely slice the cucumber and carrots and submerge them in bowls of water, set aside for later.

The Sauce

  • Mix the sesame paste and water together until you reach the consistency of double cream. Then add the sugar, soy sauce, lime and garlic paste. Whisk those together. Finally, add the sesame seeds.

Pour the sauce over a bowl of noodles. Top with the carrots and cucumber.
