Korean Courgette Namul

This simple Courgette Namul is lightly cooked and seasoned with sesame oil, sesame seeds and a touch of sweetness. It's fresh, delicate and a classic Korean side dish.

Ingredients

1 courgette

Pinch salt

Pinch sugar

1 teaspoon sesame oil

1 teaspoon sesame seeds

Method

PREPARATION

1. Slice the courgette into thin half-moon slices.

COOKING

2. Bring a pan of water to the boil.

3. Add the courgette and cook for 30–60 seconds until just tender.

4. Drain immediately and transfer to a mixing bowl.

5. Season with a pinch of salt while still hot.

6. Add a pinch of sugar.

7. Drizzle over the sesame oil.

8. Add the sesame seeds.

9. Toss gently to coat evenly.

10. Allow the courgette to cool completely.

11. Taste and adjust the seasoning if needed.

12. Serve chilled or at room temperature.

 Season while hot so the flavours absorb more easily.
