What Causes Rust?

Rust forms when:

  • A wok is left wet after washing
  • It is stored in a damp environment
  • It has not been oiled after cleaning

Carbon steel reacts quickly to moisture, so proper drying and oiling are essential.

 

How to Remove Rust

  1. Use a metal scourer or steel wool to scrub away all visible rust. Apply firm pressure and work across the affected areas until you reach clean metal.
  2. Rinse thoroughly under hot water to remove any residue.
  3. Place the wok over medium heat and dry it completely. Allow all moisture to evaporate.
  4. Once dry and still warm, add a thin layer of neutral oil. Use kitchen paper to wipe the oil across the entire interior surface.
  5. Heat the wok until lightly smoking, then turn off the heat and allow it to cool naturally.

If the rust was heavy, repeat the oiling process once more to rebuild the protective layer.

 

When Is a Wok Beyond Repair?

Surface rust is normal and easily fixed.

However, if rust has deeply pitted or eaten through the metal, the structural integrity of the wok may be compromised. In that case, replacement may be necessary.
