Sesame Spring Onion Rolls

These Taiwanese Sesame Spring Onion Rolls are crisp on the outside, soft and fluffy inside, with a savoury spring onion filling scented with sesame oil and white pepper. Finished with a sweet glaze and sesame seeds, they're perfect for breakfast, a snack or alongside a meal.

Ingredients

The Dough

500g bread flour
7g dried yeast
300ml room temperature water
25g sugar

The Filling

10–12 spring onions, sliced into rings
20g sesame oil
1 tablespoon salt
1 tablespoon sugar
1 teaspoon white pepper

To Finish

1 tablespoon sugar
2 tablespoons hot water
2 tablespoons sesame seeds

Method

PREPARATION

  1. Dissolve the yeast and sugar in the room temperature water, then stir in the bread flour until a rough dough forms.
  2. Knead the dough for 7–10 minutes until smooth, then shape into a ball and place in a lightly oiled bowl.
  3. Cover and leave to prove for 30 minutes in the fridge, or until doubled in size.
  4. Meanwhile, mix the sliced spring onions with the sesame oil, salt, sugar and white pepper to make the filling.
  5. Knock the air out of the dough and roll it into a rectangle approximately 60 x 30cm and about 5–7mm thick.
  6. Spread the spring onion filling evenly over the dough.
  7. Fold the dough into thirds, sealing the edges gently.
  8. Mix the sugar with the hot water to make a simple syrup, then brush it over the surface of the dough.
  9. Sprinkle generously with the sesame seeds.
  10. Cut the dough into 6 equal rolls and arrange them on a lined baking tray.

COOKING

  1. Leave to prove at room temperature for 30 minutes, then bake at 180°C for 20–25 minutes, until golden brown.
  2. Cool slightly before serving while still warm and fluffy.
