Roti John (Singapore Omelette Sandwich)

Roti John is a popular Malaysian and Singaporean street food made with soft bread, a cheesy omelette and curried beef mince. Finished with fresh salad, mayonnaise and chilli sauce, it's a rich, satisfying sandwich that's perfect for lunch or a hearty snack.

Ingredients

300g beef mince (or lamb mince)

2 soft brioche baguettes (or submarine rolls)

4 eggs, beaten

2 spring onions, finely sliced

100g grated mozzarella (or cheddar)

2 tablespoons butter or margarine

Small handful curly lettuce

Vegetable oil, for frying


The Beef

1 tablespoon meat curry powder (or curry powder)

1 tablespoon sambal paste


To Serve

Mayonnaise

Chilli sauce (or sriracha)

Crispy shallots

Sliced cucumber (optional)

Sliced tomato (optional)

Method

PREPARATION

COOKING

1. Heat a frying pan with a little oil and cook the beef mince over a high heat, breaking it up until well browned.

2. Stir in the curry powder and sambal paste, cook for a further minute, then remove from the heat.

3. Beat the eggs with the spring onions, salt and black pepper.

4. Melt the butter in a large non-stick frying pan or flat griddle over a medium heat.

5. Pour in the egg mixture, then sprinkle over the grated cheese before the eggs begin to set.

6. Place the split brioche rolls, cut-side down, onto the egg mixture and press gently.

7. Fold any excess egg around the bread and cook until the omelette is set.

8. Butter the tops of the rolls, then carefully flip them over and toast until golden.

9. Transfer the rolls to a serving board and layer with the lettuce.

10. Spoon over the curried beef mince and scatter with extra spring onions.

11. Add mayonnaise, chilli sauce, crispy shallots and any optional cucumber or tomato.

12. Close the sandwiches and serve immediately while warm and crispy.

 Soft brioche or submarine rolls give the best texture and absorb the egg beautifully.

 Brown the mince well before adding the spices for maximum flavour.

 Add the cheese before the eggs fully set so it melts into the omelette.

 Toasting the buttered rolls creates a crisp exterior while keeping the inside soft.
