Lychee Sangria - A Toast to Keith Floyd

  • 1 bottle chilled white wine
  • 1-2 cups Havana Club 3 year rum (to taste)
  • 1 carton Rubicon Lychee Juice
  • ½ carton Mango Juice
  • 3 cups lemonade
  • 3 Limes sliced in half
  • Sliced fruit of your choice (fresh lychee, pineapple, mango, apple)


For those of you who enjoyed the light hearted nature of Keith Floyd, my partner (Dee) and I were in Thailand last year writing a travel guide on Phuket and we were lucky enough to spend a few nights at the Burasari hotel in Patong where Keith’s only restaurant in Asia had opened just a few years before.

Here’s a snippet of our write up of Floyd’s Brasserie “Floyd fans flock from all over the world just for the Sunday Brunch. A full on Australian barbeque, perfectly roasted British beef, make your own fresh sushi bar, a never-ending selection of cheeses, salad bar, and last but not least, free flowing wine and sangria.”

In memory of Floyd I suggest we never forget: a simple Sangria, great food and a small party are always good for the soul… Enjoy!

Method

1. Throw all the ingredients into a big punch bowl filled with ice.

2. Squeeze the limes, add the fruits and mix well.

3. Serve chilled and don’t forget to top up the glasses to keep your guests happy.
