Korean Bean Sprout Namul

This Bean Sprout Namul is crisp, refreshing and lightly seasoned with sesame oil and soy sauce. It is one of the most popular Korean side dishes and pairs beautifully with rice and grilled meats.

Ingredients

200g bean sprouts

1 spring onion, finely sliced

1 teaspoon Korean chilli flakes (optional)

1 teaspoon sesame oil

1 teaspoon light soy sauce

Method

PREPARATION

COOKING

1. Bring a pan of water to the boil and add a pinch of salt.

2. Add the bean sprouts and cook for 30 seconds only.

3. Drain immediately to retain their crunch.

4. Transfer the bean sprouts to a mixing bowl.

5. Drizzle over the sesame oil while still warm.

6. Add the light soy sauce.

7. Toss gently until evenly coated.

8. Finely slice the spring onion.

9. Mix the spring onion through the bean sprouts.

10. Add a pinch of Korean chilli flakes if using.

11. Allow to cool completely before serving.

12. Serve as part of a selection of Korean side dishes.


School of Wok Tips

 Don't overcook the bean sprouts or they will lose their crunch.

 Season while warm for the best flavour absorption.

 A little chilli adds colour and gentle heat.

 Bean Sprout Namul is best served chilled or at room temperature.
