What? Chinese chives are actually garlic chives. They have a mild and sweet garlicky flavour - less piquant than spring onions, but stronger in texture and taste than the more herb-like western chive.

How? Used in the chinese chive pancakes and jiao zi dumplings - it’s a classic ingredient in Chinese cooking. A flowering garlic chive can also be eaten. Finely chop before cooking to bring out the flavour.

Where? All good Chinese supermarkets. Or, given what a great summer we’ve had, you can try growing your own in your herb garden - they’re great for growing indoors.
