How to Rescue Your Wok

School of Wok Technique Guide

If your wok has developed speckles of rust, do not throw it away. A carbon steel wok can almost always be rescued. Rust usually forms because the wok was not dried properly after washing. The good news is that rescuing a wok simply means re seasoning it correctly.

When Does a Wok Need Rescuing?

You may notice:

  • Small rust spots or speckles
  • Dull patches where seasoning has worn away
  • A rough texture on the surface

This does not mean the wok is ruined. It just needs restoring.

Step 1: Scrub Away the Rust

  1. Use a metal scourer or steel wool to scrub the rusty areas firmly.
  2. Continue scrubbing until the rust spots are completely removed and you can see clean metal underneath.
  3. Rinse thoroughly to remove any residue.

The goal is to remove all rust before re seasoning.

Step 2: Dry Thoroughly

  1. Place the wok over medium heat.
  2. Allow all moisture to evaporate completely.
  3. The wok must be fully dry before oil is applied.

Proper drying is essential to prevent rust from returning.

Step 3: Re Season the Wok

  1. Add a small dab of neutral oil to the warm wok.
  2. Using kitchen paper, wipe the oil around the entire inside surface, creating a very thin, even layer.
  3. Increase the heat and allow the oil to heat until it begins to smoke lightly.
  4. Turn off the heat and allow the wok to cool naturally.

This process rebuilds the protective seasoning layer.

School of Wok Tips

  • Always dry your wok over heat after washing.
  • Apply a thin layer of oil after each clean.
  • Do not leave a wok soaking in water.
  • Regular use keeps the seasoning strong.
