For too long, Chinese food in both takeaways and restaurants has been renowned for a slight disregard in animal health and welfare with harsh fishing techiniques and ruthless hunting of certain species.

Being lucky enough to have been brought up in both Western and Eastern cultures I fully support the idea of ethical produce and free-range products. The real truth behind ethical ways of farming our meats and veg are demonstrated in the huge difference it makes in the taste of the food. The free range chicken we use at School of Wok from our local butcher is far superior to a Tesco value caged bird both in taste and texture.
