Strawberry Jam Stir Fry
A deliciously sweet and savoury veggie stir fry perfect with steamed rice

Ingredients

½ red onion

3 cloves garlic

½ thumb sized piece of ginger

300g green beans
The Sauce

Juice of 3 mandarins

2 tbsp seedless strawberry jam

3 tomatoes
-
2 tbsp light soy sauce
-
1 tbsp miso paste
-
½ tsp dark soy sauce
Method
Preparation
Roughly chop the red onion, peel and crush the ginger and garlic, and then roughly slice the tomatoes and pound them in the pestle and mortar. Now blanch the green beans in boiling water for 3 minutes.
Squeeze some mandarin juice into the mortar, add the strawberry jam, miso paste, light soy sauce and dark soy sauce and mix well. Remove the tomato skins from the mortar. (We will sear them later in the Wok.)
Cooking
Now sear the onion, ginger and garlic for 20 seconds at a high heat with a generous amount of oil in the wok. After 20 seconds add the blanched green beans. You want to press down on the green beans and flip around the contents of the wok as you go. Stir fry the beans for another 1-2 minutes. Add the removed tomato skins from earlier to the wok and sear for 1 minute. To finish off, add your hoisin sauce to the pan. Keep it on high heat and bring it to a rigorous boil for another minute. Fold it through a few times and the dish is done.
