Homemade Hoisin Stir Fry (Green Beans with Jam Hoisin Sauce)

This quick wok dish uses a clever homemade “hoisin-style” sauce made from strawberry jam, citrus and miso. Stir fried with blistered green beans, ginger and garlic, it delivers a bold balance of sweet, savoury and tangy flavours with a glossy, caramelised finish.

Ingredients

200g green beans
½ red onion, sliced
1 thumb-sized ginger, roughly chopped
3 garlic cloves, roughly chopped
2 tomatoes (skins reserved)
Vegetable oil

The Sauce

Juice of 2 mandarins (or 1 orange)
2 tablespoons strawberry jam
2 tablespoons miso paste
2 tablespoons light soy sauce
1 teaspoon dark soy sauce

Method

PREPARATION

  1. Slice the onion, roughly chop ginger and garlic, and prepare tomato skins.
  2. Blanch green beans in boiling water for 3 minutes, then drain.
  3. In a bowl, mix mandarin juice with strawberry jam until smooth.
  4. Add miso paste, light soy sauce and dark soy sauce, mixing well.

COOKING

  1. Heat a wok over high heat with oil until smoking.
  2. Add onions and stir fry for 20 seconds.
  3. Add ginger and garlic, tossing briefly until fragrant.
  4. Add green beans and stir fry until lightly blistered.
  5. Add tomato skins and cook until softened.
  6. Pour the sauce around the edge of the wok.
  7. Allow it to boil vigorously, then toss everything together.
  8. Cook briefly until the sauce caramelises and coats the beans, then serve.
