Ingredients

2 slices Japanese milk bread
2 eggs
1 cup finely shredded cabbage
2 tablespoons finely sliced onion
1 spring onion, finely sliced
½-1 teaspoon salt
1 tablespoon sugar
1 slice American cheese
Butter, for toasting
Ketchup, to drizzle
Kewpie mayonnaise, to drizzle

Method

PREPARATION

  1. Finely shred the cabbage and slice the onion and spring onion.
  2. Crack the eggs into a bowl, add the cabbage, onion and spring onion and mix until fully incorporated.
  3. Season with ½-1 teaspoon salt and mix well.

COOKING

  1. Heat a pan over medium to medium high heat and add a generous amount of butter.
  2. Toast each slice of milk bread in the butter for 1-2 minutes per side until golden brown. Set aside.
  3. In the same pan, add the egg mixture and spread evenly. Shape into a square slightly smaller than the bread.
  4. Cook for about 5 minutes on one side until golden, then flip carefully and cook for another 5 minutes.
  5. Reduce the heat slightly and place the slice of American cheese on top to melt.
  6. Sprinkle 1 tablespoon sugar evenly over the surface.
  7. Transfer the cooked egg square onto one slice of toasted bread.
  8. Drizzle with ketchup and Kewpie mayonnaise.
  9. Top with the second slice of bread, press gently and serve immediately.
