200g soba noodles
½ red cabbage, finely sliced
½ red pepper, finely sliced
½ cucumber, centre removed and cut into fine matchsticks
Handful peas
2 tablespoons roasted peanuts, roughly crushed
½ teaspoon sesame oil
The Peanut Dressing
3 tablespoons smooth peanut butter
1 teaspoon sambal oelek
1 tablespoon light soy sauce
1 tablespoon rice vinegar
1 teaspoon honey or golden syrup
1 teaspoon sesame oil
3 to 5 tablespoons water
1. Prepare the dressing
In a small saucepan gently heat peanut butter with sambal oelek and a splash of water. Stir until smooth. Add light soy sauce, rice vinegar, honey or golden syrup and sesame oil. Gradually add more water until you reach a dripping consistency that will coat the noodles. Remove from heat and allow to cool.
2. Soak the noodles
Soak soba noodles in hot water for about 5 minutes until loosened. Drain and briefly boil for 1 minute to cook through the centre.
3. Cool and separate
Drain noodles and rinse immediately under cold water to stop cooking. Toss with ½ teaspoon sesame oil to keep strands separate.
4. Dress the noodles
