Cold Soba Noodle Salad with Spicy Peanut Sauce
A healthy vegan soba noodle salad covered in creamy peanut butter sauce with a spicy kick!

Ingredients
- 200g soba noodles
- Half a red pepper
- 1/8th of a red cabbage
- A quarter of a cucumber
- 40g of garden peas
- 4 tbsp crushed peanuts
The Sauce
- 3 tbsp creamy peanut butter
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 2 tsp rice vinegar
- 2 tsp sambal oelek (or sriracha)
- 2 tsp honey or golden syrup
- 4 tbsp water
Method
Preparation
1. Put the soba noodles in a bowl, cover with hot water and leave to soak for 5 minutes, until the noodles have softened but are still al dente. Remove from the water and leave to dry on a clean tea towel.
2. In a sauce pan heat the peanut butter until melted add the soy sauce, sesame, oil, rice vinegar, sambal oelek, maple syrup and water and stir until well combined. Set aside.
3. Slice the red pepper and red cabbage. Finely chop the coriander.
Cooking
Place all the vegetables and noodles in a separate bowl, pour over the sauce and mix together until everything is evenly coated. Transfer the dressed noodles to a serving plate and scatter over the crushed peanuts and coriander to finish. Serve and enjoy!
