5 days of non-stop dumplings, pastries, rolling, folding and wrapping will give you a real opportunity to start to understand the intricacies involved in such a skilled part of Chinese cuisine.

This specialist course covers essential skills and knowledge, imperative to becoming a Chinese dim sum chef. Covering a variety of dim sum making skills; from making pastries from scratch, to special rolling and folding techniques, to building a perfectly-balanced Chinese dim sum menu, students will gain hands on experience in the art of dim sum making. Participants will also enjoy a unique day of noodle making techniques; from braising, to classic wok-fried dishes, and including a hand-pulled noodle demonstration.

All required equipment and clothing will be supplied for the duration of the course. Specialist knives, equipment and clothing are available for students to buy should they choose to before, during or following the completion of the course.

This course is the Second Module of our Bronze diploma. After completing this course you can progress to Module 3: Banqueting and earn your Restaurant Service Certificate

  • Making pastries from scratch

  • Understanding the importance of steaming and deep frying certain dim sum

  • Making specialist breads and steamed buns

  • Understanding the intricacies of rolling, folding and wrapping handmade dim sum pastries

  • Over 20 different types of dim sum will be covered in this course

  • Students will not be formally assessed on this course, however the chefs will provide the right guidance to encourage future learning and motivate students to be able to conquer what is said to be a secret that only the Chinese know how to cook. This course is incredibly hands on and requires dedication and determination to want to excel in dim sum making.
