Vietnamese Sweet and Salty Fish

Caramelised Cod with a fragrant sweet and salty sauce, perfect for a #fishfriday supper

  • 3 or 4 pieces of cod, hake or salmon (pin boned, skin removed)

  • 5 thai shallots, finely sliced

  • a finger sized piece of Galangal

  • 4 thai chilies

  • 2 cloves of garlic

  • 2 spring onions

  • 2 kaffir Lime leaves

Sauce

  • 100g sugar

  • 1 tin coconut milk

  • 2 tbsp fish sauce

Garnish

  • 1 spring onion, julienned

  • ½ bunch coriander

  • long red chilli, sliced (optional)

  • Preheat your oven to 180°C. Add your fish to the pot, along with the chopped galangal, chillies, garlic, 2 kaffir lime leaves, spring onions and thai shallots.

  • Now make the sauce. First melt the sugar in a medium heat pan, until it caramelises. Once the colour is a deep brown, add the coconut milk and combine. Once the ingredients have melted together, season with the fish sauce. Pour the sauce over the fish and bake in the oven at 180°C for 20-30 minutes.

  • Serve with rice and garnish with coriander, spring onion and chilli.
