3 thumb sized pieces of ginger

2 spring onions

Vegetable oil

1 tsp white pepper.

1 Tbsp stir fry sauce/ oyster sauce

Sea salt

1 Tbsp Soy Sauce

Finely chop the garlic, ginger and spring onion.

Cube the tofu.

Add a good amount of oil to the wok, enough to cover all of the ginger and garlic.

Start the wok on a high heat and sear the ginger, garlic and spring onion.

After an initial stir, turn the heat down to a low heat and cook for 10 minutes until golden brown throughout, stirring every 2-3 minutes.

Once golden brown, add the vegetarian stir fry sauce, salt and pepper.

Mix well, then turn the heat up again before adding the tofu.

Work quickly, stir frying the tofu so that it doesn’t burn, then bring it down to a medium heat again for ten minutes (stir every 2-3 minutes).

Once the tofu is golden brown, serve with a splash of soy sauce over the top.
