Finely slice the spring onion. Grate cheese of choice. Finely dice the carrot.
Break the eggs onto a mixing bowl, mix in the spring onion and carrot. Season with salt and pepper.
Heat a medium size pan over medium heat. Add in the oil and bring it to a slight smoke.
Ensure that the oil is evenly dispersed and immediately pour in the egg mixture.
Let cook for 5 seconds, add the grated cheese then use a spatula or wooden spoon to start pulling in the edges of the omelet and pouring the uncooked egg mixture out to the edges to cook.
Use a spatula to carefully roll up the omelet.
Once rolled remove it to a plate and slice into 1cm sliced across the length of the omelette and serve.
