150g plain flour
1 teaspoon baking powder
3 tablespoons sugar
Pinch salt
2 eggs
120–150ml milk
40g butter, melted
½ teaspoon vanilla extract
6 eggs (for topping)

.Method
1. Preheat the oven to 200°C and lightly grease a muffin tray with oil, butter or bacon fat.
2. In a mixing bowl combine the plain flour, baking powder, sugar and salt.
3. Add the eggs and begin whisking the mixture together.
4. Gradually pour in the milk while whisking until the batter becomes smooth and similar to a thick pancake batter.
5. Stir in the melted butter and vanilla extract to create a rich cake-like batter.
6. Fill each muffin mould about two-thirds full with the batter.
7. Sprinkle grated mozzarella and bacon bits over the batter if using.
8. Carefully crack one egg into the centre of each mould so the yolk sits on top of the batter.
9. Place the tray into the oven and bake for 12–13 minutes until the bread is risen and lightly golden.
10. Remove from the oven once the egg whites are set but the yolk is still slightly soft if desired.
11. Allow the breads to cool slightly before removing from the tin.
12. Serve warm while the centre remains soft and the cheese is melted.
