Pancit Bihon
Thin rice noodles stir-fried with vegetables, meat, and a savoury sauce.

Ingredients
- 2 packs pancit bihon rice noodles
- 250g pork tenderloin cut into 1 cm thick slices
- 250g chicken cooked, deboned, and cut into thin slices
- 50g sugar snap peas, thinly sliced
- 1 cup carrots, julienned
- ½ small cabbage chopped
- ½ medium sized onion chopped
- 5 cloves garlic, chopped
- 1 chicken stock cube
- 3 tbsp Oyster sauce
- 1 tbsp soy sauce
- 3 to 4 cups water
Method
Preparation
In a large wok, saute the garlic and onion. Add the pork and chicken and cook for 2 minutes.
Cooking
Once cooked through, remove from the wok and add the carrots, peas and cabbage. Stir fry those for a few minutes and set aside. To the empty wok, add the oyster sauce, soy sauce chicken cube and water. Add the pancit bihon and allow to simmer until soft. The noodles should absorb all the liquid. Now add the cooked ingredients to the noodles, mix through and enjoy!
