  • 3 or 4 pieces of cod, hake or salmon (pin boned, skin removed)

  • 5 thai shallots, finely sliced

  • a finger sized piece of Galangal

  • 4 thai chilies

  • 2 cloves of garlic

  • 2 spring onions

  • 2 kaffir Lime leaves

Sauce

  • 100g sugar

  • 1 tin coconut milk

  • 2 tbsp fish sauce

Garnish

  • 1 spring onion, julienned

  • ½ bunch coriander

  • long red chilli, sliced (optional)
