Thai Basil Prawns

Pad Grapao Goong: A sweet, salty, spicy and fragrant Thai basil prawn stir-fry!

Ingredients

  • 3 birds’ eye chillies
  • 4 garlic cloves
  • 300g peeled and deveined prawns
  • 100ml chicken stock

The Sauce

  • 2 teaspoons sugar (or honey)
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 bunch of Thai basil leaves
  • Steamed rice to serve

Method

Preparation

Finely slice the garlic and bird’s-eye chillies . Finely chop the garlic.

Mix the sauce ingredients in a small bowl or ramekin.

Cooking

Heat the vegetable oil in a wok until smoking-hot. Add the garlic, and fry for 1-2 minutes. Add the prawns and stir-fry for 2 minutes. 

Add the chillies and the sauce. Stir-fry for another minute and add chicken stock. Let it cook for 2 -3 minutes.  Add the basil, and stir-fry until wilted. 

Serve with steamed rice.
