Thai Style Pork Patties
If you're craving the flavours of Thailand and only have 15 minutes, these small pork patties are the perfect solution to your problem!

Ingredients
- 400g pork mince
- 1 stalk lemongrass
- 1 thumb ginger
- 2-3 cloves garlic
- 1-2 Birds Eye chilli
- Handful coriander with stalks
- 2 lime leaves
- 2 Tbsp toasted Green Dragon rice, ground in a pestle and mortar
- 1 egg
- 2 Tbsp fish sauce
- 1/2 tsp sugar
- Oil for frying
- Sweet chilli sauce to serve
Method
Preparation
Toast the rice in a dry pan until golden brown, then crush in a pestle and mortar.
Finely chop the lime leaves, lemongrass, ginger, garlic, chilli, and coriander.
Place in a bowl with the pork and 2 Tbsp of the rice grain.
Season with the fish sauce and a pinch of sugar. Add an egg and mix well. Form the mixture into a ball. Scoop it up in your hand and drop it back into the bowl around ten times, this binds the mixture together. Form a few gold ball sized meatballs and flatten into patties.
Cooking
Sprinkle with extra toasted rice crumb, and fry in a pan on a medium to high heat, until golden brown (3-4 minutes each side). Serve with sweet chilli sauce and enjoy!
