Thai-Style Pork Skewers
These pork skewers or Moo Ping are a great example of what Thai street food has to offer. Seasoned with a fragrant marinade, this pork recipe is packed full of classic Southeast Asian flavours.

Ingredients
- 400g pork shoulder
MARINADE
- 4 garlic cloves
- Small handful of coriander stalks
- 1 tbsp palm sugar
- 1 tbsp fish sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1 tsp white pepper
- 100ml coconut milk
GARNISH
- 1 fresh lime
- Large red chillies
Method
Preparation
• Place all ‘The Marinade’ ingredients together into a food processor or pestle and mortar and blitz the ingredients until a smooth liquid / paste has formed.
• Finely slice the pork and place into a mixing bowl and pour ‘The Marinade’ over the sliced pork. Massage the marinade well into the pork, cover the bowl and place in the fridge for a minimum of 2 hours or ideally overnight.
• Skewer the pork slices with bamboo skewers.
Cooking
• Grill the pork skewers for 3-4 minutes on both sides on a high heat on a griddle pan, barbecue or frying pan. Serve with a squeeze of lime and fresh chillies to garnish.
