• In a small bowl, mix marinade ingredients together with chicken wings. Set aside to marinade for at least 30 minutes, 4 hours maximum. Slice ginger, spring onions, garnishes and set side.
Cooking
• Heat 2 tablespoons vegetable oil in a wok on high heat and add the chicken wings skin side down. Cook for 5 minutes or until chicken wings skins turn golden brown.
• Add ginger and spring onions and stir fry for 2-3 minutes to release the aromas. Add soy sauce, dark soy sauce, sesame oil, and cola.
• Bring liquid to a boil then turn heat down to low, cover with a lid and simmer for 20-25 minutes, or until sauce reduces to a thick glaze. Stir mixture several times to make sure sauce does not burn. Finally add a dash of sesame oil and stir,
• Serve in a large bowl with spring onion and coriander scattered on top
