Tofu with Sesame Flavoured Mushrooms

Whilst the weather is quickly changing, heavier stews and autumn foods seem to start taking over the food magazines.

How about trying something light & healthy yet steaming hot to warm you through with a bowl of fluffy white rice?

  • 1 pack of firm tofu (Blue Dragon / Mori-Nu can be found in many supermarkets)
  • 4 Dried Shitake mushrooms
  • Handful of coriander
  • 1 spring onion

The Sauces

  • 2 tbsp light soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp vegetarian stir fry sauce (optional)

Preparation

Soak the mushrooms over night in hot water

Carefully open the tofu pack and cut tofu into 3mm thick slices and lay carefully on a suitable steaming plate

Finely chop the coriander

Finely chop the mushrooms and marinade with ‘the sauces’ and some finely chopped coriander & spring onion

Place the mushrooms on top of the tofu

Cooking

Bring a large steaming pan to boil on high heat

Once the water is boiling vigorously, place the tofu plate on the steamer and cover

Steam for 10 minutes

Serving

Remove from steamer & sprinkle with freshly chopped coriander

Serve with a bowl of steamed white rice
