1. Slice the cucumber in half quarters length wise and remove the seeds using a spoon to scrape them out.
2. Using the back of a knife or cleaver, bash the cucumber to flatten and cut into 5 cm chunks, then add to a serving bowl
3. Finely slice the spring onion and mix together with the cucumber

4. Prepare ingredients, then mix all 'the sauce' ingredients together and have ready to dress the salad, dressing just 10 minutes before serving
