Smashed Cucumber Salad

This summery recipe is easy to make and one of our healthier crunchy options. It’s a light meal yet has a kick of spice that will liven up your taste buds.


  • 1 whole cucumber
  • 1 whole spring onion

The Sauce

  • 1 Tbsp. Ching Kiang Black Vinegar
  • 1 tsp. sugar
  • ½ tsp. salt
  • 1 tsp. Lee Kum Kee Pure Sesame Oil
  • 1 tsp. Lee Kum Kee Chiu Chow Chilli Oil (optional)

Garnish

  • crushed peanuts
  • toasted sesame seeds
  • chopped coriander


Preparation

1. Slice the cucumber in half quarters length wise and remove the seeds using a spoon to scrape them out.

2. Using the back of a knife or cleaver, bash the cucumber to flatten and cut into 5 cm chunks, then add to a serving bowl

3. Finely slice the spring onion and mix together with the cucumber

Finishing the dish

4. Prepare ingredients, then mix all 'the sauce' ingredients together and have ready to dress the salad, dressing just 10 minutes before serving
