Roti John

A fully loaded Singaporean street food sandwich, sure to make you happy at any time of day!

  • ½ long soft baguette or 1 soft submarine roll or 1 soft brioche baguette

  • 300g minced beef or lamb

  • 1tsp curry powder

  • 3 eggs, beaten

  • 2 spring onions, finely sliced (plus extra to garnish)

  • 1Tbsp sambal chili paste

  • Pizza Mozzarella

  • Pinch ground black pepper

  • Small pinch of salt

  • 1 Tbsp cooking oil

  • 100g butter, softened

Sauces

  • Mayonnaise

  • Sriracha chili sauce or Malaysian/Indonesian chili sauce

Add ons

  • Sliced cheese (American-style)

  • Curly leaf lettuce

  • Fresh coriander, to garnish

  • Fried shallots, to garnish

Preparation

  • If you use a long baguette, cut in half. Slice the baguette horizontally with a serrated knife and take care not to cut through all the way

Cooking

  • Preheat a frying pan, large enough for your baguette. Add the ground meat and continue to fry until the meat browns. Add curry powder and sambal chili paste. Stir well and combine. Transfer mixture to a bowl.

  • Crack eggs in a jug and add pinch of salt and black pepper. Lightly beat and add spring onions.

  • Melt a knob of butter in the frying pan and add egg mixture, then sprinkle over mozzarella. Place the baguette cut-side down on top of the egg mixture and press it down so the bread absorbs some of the juices and eggs and the mixture will stick to the bread. Gently push in the filling that oozes out from the side. Cook until the eggs are set. Spread softened butter on top of the baguette.

  • Flip the bread over so the filling side is facing up and let toast for a minute.

  • If you want to add cheese, quickly add the cheese on top of the filling when the filling is still warm so it can slowly melt the cheese. Remove from the frying pan, then top with lettuce, and generously drizzle some chili sauce, mayonnaise and cheese sauce.

  • Sprinkle over the cooked mince, and then close the other half of the baguette over and again drizzle over some of the sauces if you like. Garnish with some spring onions, fried shallots and coriander leaves.
